Bellingham Tourists

We ate lunch at a street cart, walked around downtown, saw a waterfall in a park, had a beer at a brewery, and then went to Trader Joe's to go grocery shopping. My favourite part of Bellingham was the Trader Joe's...

Roast Lamb

Roast lamb with paprika and orange, served with baby kale salad, rosemary orzo, and red wine - a very rich yet easy dinner to make.

Bowen Island

Went to Bowen Island for the day and paid for 8 hours of parking at Horseshoe Bay. After lunch, we decided to attempt a hike which my book lists as 7 hours long. Directions were horrible and we didn't even get to any viewpoints (because we missed the turnoffs) before we had to turn around so that we could make it back to the car on time. All we saw were trees.

We were so desperate to see ANY view that we went off trail. This was the best view we had in the four hours we spent hiking.

Bowen Island is beautiful though, and I would definitely come back and plan accordingly to give me enough time to conquer that hike!

Minnekhada

After much driving and a failed attempt to go to Buntzen Lake, Leonard and I finally arrived at a destination. It was called Minnekhada Regional Park, located in Pork Coquitlam - not our original choice, but it was very satisfactory. The drive into the park was lovely, and we did a mini-hike, where we were rewarded with a view of the Pitt River and a marsh. The only downside was the groups of young adults around us who were hiking while blasting bad techno music. There was a silver lining though - we ended up going faster than we would've otherwise because we wanted to beat the music!

A Flight to the Mountains

My friend Noel is a pilot, and he messaged me the other day to ask me if I wanted to come along on his plane ride. Of course I said yes! It was a gorgeous day, and we flew from Boundary Bay to the mountains by Howe Sound. I sat in the co-pilot's seat, on top of some cushions so I could see over the controls, and he even let me steer for a few minutes once we got to the mountains.

Healthy Eating

I ate too much unhealthy Mexican food in California and needed something healthy...hence my big batch of lentil soup and Creole spiced bean salad.
